MOCK GARLIC MASHED POTATOES

1 medium head cauliflower
1 tbsp cream cheese, softened
1/4 cup grated Parmesan
1/4 tsp minced fresh garlic
1/2 tsp chicken base or bouillon
1/8 tsp ground black pepper
1/8 chopped fresh or dried chives, for garnish
3 tbsp unsalted butter
Bring a large pot of water to a boil over high heat. Clean and cut the cauliflower into small pieces. Cook in the boiling water for about 6 minutes, until well done. Drain well. Do not let cool. Pat the cooked cauliflower very dry between several layers of paper towels (otherwise your inchpotatoes inch will fall apart). In a bowl with an immersion blender, or in a food processor, pulse the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth. Garnish with chives and serve hot with pats of butter. Serves 4 Note: I added the garlic to the boiling water (I use chicken broth) and the cauliflower to that is doesn’t have such a strong garlic taste. I also like adding a little roasted garlic or chopped fresh rosemary.
