2 extra-large vine ripe tomatoes (see note)
1 small green bell pepper
1 medium Vidalia onion
1 tbsp white vinegar
1/3 cup extra-extra virgin olive oil
Salt and freshly ground pepper to taste
1/4 cup crumbled feta cheese, or to taste
Freshly chopped parsley for garnish

Chop tomatoes into large cubes. Chop bell pepper and onion into medium cubes. Toss vegetables in a bowl with the vinegar, oil, salt and pepper until well coated. Let salad sit at room temperature about 10 minutes for flavors to blend together. Transfer to a serving plate, sprinkle top with feta cheese and garnish with parsley. Serves 4
