1 large onion, thinly sliced
2 clove garlic, minced
8 oz mushrooms, quartered
1/2 tsp dried thyme
1/8 tsp white pepper
2 lbs boneless, skinless turkey breasts
3 tbsp flour
1/3 cup dry white wine or chicken broth
1 tbsp tomato paste
Salt and pepper, to taste
Combine first 5 ingredients in a crock pot. Rinse and pat dry turkey, cut into 1 1/2 inch cubes. Coat with flour and arrange on top of onion mixture. Mix wine with tomato paste; pour over turkey. Cover and cook on LOW until turkey is tender, about 7 1/2 to 8 hours. Stir gently to coat turkey with salt and season to taste. Serves 4
NOTE: I usually combine with cooked pasta before serving.
