BAKED POTATO SALAD

8 medium potatoes (about 2 3/4 pounds)
8 ounces bacon, chopped
1 cup mayonnaise or salad dressing (I use equal portions sour cream and mayonnaise)
1/2 cup finely chopped onion
1 (2 1/4-ounce) can sliced pitted ripe olives (about 1/2 cup)
1/4 tsp pepper, garlic powder
1 (16-ounce) package process cheese spread, cubed (I have used pepper jack, American or smoked cheddar cheeses)
Chives, garnish
Cook potatoes in enough boiling water to cover for 20 to 25 minutes or till tender. Cool; peel and cube.
Meanwhile, cook the chopped bacon till nearly done; drain on paper towels and set aside.
In a very large mixing bowl, combine the mayonnaise, onion, olives and pepper; mix well. Fold in the potatoes and cheese. Transfer to a 13x9x2-inch (3-quart rectangular) baking dish. Sprinkle the top of the potato mixture with bacon. Bake, uncovered, in a 350 oven for about 30 minutes or till bubbly. Garnish with chives. Serves 12-14
