1/4 cup milk, mixed with 1 egg white
1 lb catfish fillets
1/2 cup flour
3 tbsp cornmeal
1/2 tsp Cajun spice
1/2 cup parmesan cheese
Dash pepper
1/4 tsp garlic and Old Bay Seafood seasoning
2 green onions, chopped
2 tbsp butter and vegetable oil
Juice of 1 lemon
Parsley, garnish

Make breading station: 1st - mix together flour, cornmeal and Cajun seasoning; 2nd - milk; 3rd mix together cheese, pepper, garlic and Old Bay Seafood seasoning. Start with dipping fillets in flour mixture, then milk mixture and finally the cheese mixture. Allow to rest to get the breading firmed a little.

Meanwhile, heat butter and oil in a skillet over low heat. Add the breaded fillets and saute 5-10 minutes per side. Remove to a warm pan. Add onions to skillet and lemon juice and saute until onions are tender. Drizzle lemon mixture over fillets and sprinkle with chopped parsley.
