2 tbsp butter
2 tbsp olive oil
2 red onion, thinly sliced
4 cloves garlic, finely chopped
Pinch hot red chili flakes
2 lb boneless, skinless chicken breasts, cut into thin strips
1 cup sliced mushrooms
2 sweet red pepper, cut into thin strips
2 green pepper, cut into thin strips
2 yellow pepper, cut into thin strips
3 cups 35% Real Whipping Cream OR evaporated milk
3 tsp salt
1 1/2 tsp pepper
1 1/2 lb fettuccine
1/2 cup fresh basil or parsley, chopped
1/2 cup grated Parmesan cheese

Heat olive oil and butter in a large deep skillet. Add onions, mushrooms, garlic and hot pepper flakes. Cook 5 minutes or until onions are fragrant and tender. Add chicken pieces and cook until just colored on all sides. Add peppers and cook 5 minutes longer so that they begin to wilt. Add cream, salt and pepper. Bring to a boil. Reduce heat and simmer gently 5 to 8 minutes.

Meanwhile cook fettuccine until tender, drain well, toss with cheese, sauce and herbs. Taste and adjust seasoning if necessary.
