1 1/2 cups raisins
1/2 cup hot water and butter
1 cup sliced celery and chopped onions
1/4 cup chopped parsley
2 cups diced fresh apples
3/4 cup chopped walnuts
6 cups bread cubes, toasted
1 1/2 tsp dried thyme leaves
1 tsp salt
1/2 tsp pepper and all spice
In a small bowl, combine raisins and water; set aside. Melt butter in a Dutch oven and add vegetables and parsley. Cook over medium heat 5 minutes. Stir in apples and nuts; cook 5 minutes. Add raisin mixture and remaining ingredients. Cook and stir 2-5 minutes or until bread is evenly moistened and heated through. Scoop onto greased baking sheet with ice cream scoop. Bake at 350 for 20 minutes, brushing with melted butter. Serve on baked or stemed acorn squash rings or use for stuffing a turkey. Makes about 6 cups or 8 servings.
