3 tbsp olive oil
1 medium onion, diced
1 large clove garlic, minced
4 boneless, skinless chicken breasts, cut into cubes
1 (4 oz) can chopped green chilies
1/2 tsp ground cumin
Salt and pepper, to taste
10 (8 inch) flour tortillas
2 cups shredded Monterey jack cheese
Heat oil in skillet and saute onion and garlic until onions are translucent. Add chicken and remaining ingredients except tortillas. Cook until chicken is opaque, about 1-2 minutes.
Preheat oven to 300 to warm tortillas. Grease a 13x9 inch baking pan. Divide filling among tortillas and top with cheese. Roll up and place in baking dish seam side down. Cover dish with foil and bake until cheese is melted, about 10 minutes.
