1 (10 oz) pkg frozen chopped spinach, thawed, drained and squeezed dry
1/4 cup chopped onion
1/4 cup each mayonnaise and sour cream
1 small carrot, finely chopped
1 garlic clove, pressed
Salt and ground black pepper to taste
20 slices cocktail rye bread squares
4 oz Monterey Jack or Swiss cheese
Preheat oven to 375 degrees. In medium bowl, combine all ingredients except bread and cheese; mix well. Spread spinach mixture onto bread squares. Arrange on a baking stone or cookie sheet. Carefully slice 20 slices of cheese. Place one slice of cheese on top of each bread square. Bake 10-12 minutes or until cheese is melted.
