1 (15 1/2 oz) can salmon, drained and bones removed
1/3 cup mayonnaise
2 tbsp minced parsley and onion
2 tbsp drained, chopped pimiento
2 tsp lemon juice
Dash pepper
3/4 cup shredded cheddar cheese, divided
8 slices French bread or English muffins

In a bowl, break up salmon into mix with next 6 ingredients and 1/2 cup cheese. Spread about 1/4 cup mixture on each slice of bread. Sprinkle with remaining cheese over salmon mixture. Broil about 6 inches from heat for 3-4 minutes or until cheese melts and tops are golden. Serve 6-8
