OLD WEST PORK CHOPS

2 tsp vegetable oil
4 boneless pork sirloin chops
3/4 large onion, sliced thickly
2 tbsp chili powder
3/4 green bell pepper, seeded and chopped
2/3 cup long grain white rice, uncooked
2/3 cup tomato sauce
1 cup water

Preheat oven to 350. Heat oil in an oven-proof skillet over medium heat. Cook pork 2 minutes per side until browned. Remove from skillet and set aside. Cook onion slices 1 minute per side. Set aside.

Add chili powder to skillet and cook 1 minute, stirring. Stir in remaining ingredients and season with salt and pepper. Arrange pork over rice mixture. Place an onion slices over each chop. Cover and bake for 45 minutes.
