BAKED TUBINI WITH ROASTED CHICKEN AND THREE CHEESES

2 tbsp unsalted butter
2 tbsp flour
1 cup each milk and chicken broth
1 1/2 cups shredded mozzarella cheese, divided
1/2 cup grated parmesan cheese, divided
Salt andpepper
1/2 (8 oz) box tubini pasta, cooked al dente, drained
2 cups broccoli florets
2-3 cups chopped roasted chicken, skin removed
1/2 cup crumbled mild blue cheese

Preheat oven to 350. While pasta is cooking, adding broccoli after pasta has been boiling about 6 minutes, melt butter in a large saucepan. Whisk in flour until blended; cook until bubbly. Slowly stir in milk and broth; whisk constantly over low heat until mixture is smooth and simmers, about 8 minutes. Stir in 1 cup mozzarella and 1/4 cup parmesan; remove from heat.

Combine cooked pasta and broccoli to the cheese sauce and add the chicken. Pour into a 13x9 inch baking pan and sprinkle with blue cheese and remaining mozzarella and parmesan cheeses. Bake until top is golden and mixture is bubbly, about 25 minutes. Cool 10 minutes before serving. Serves 4
