1 1/2 cups all-purpose flour
1 cup rolled oats
3/4 cup chopped dried apricots
1/2 cup firmly packed brown sugar
1 tbsp slivered almonds
1 tsp baking powder
1 tsp ground cinnamon
2/3 cup plain yogurt
3 tbsp vegetable oil
Preheat oven to 375.
In medium bowl, combine flour, oats, apricots, brown sugar, almonds, baking powder, and cinnamon. Stir in yogurt and oil, mixing well. Roll dough into walnut-sized balls. Place on ungreased baking sheets. Flatten balls slightly. Bake 15 minutes, or until edges are lightly browned. Remove to wire racks to cool.
