STRAWBERRIES ROMANOFF

4 pounds strawberries, hulled and sliced
1 cup sugar
1 cup plus 2 tablespoon Grand Marnier
2 cups heavy cream
1/2 cup confectioners’ sugar

Garnish: 6 to 8 whole strawberries

Combine strawberries, sugar, and 1 cup Grand Marnier in a large bowl; macerate for 30 minutes. Strain strawberries and add liquid to a small saucepan. Cook over low heat for 5 minutes, or until liquid is slightly thickened. Beat cream in a large bowl until soft peaks form. Add 2 tablespoons Grand Marnier and confectioner’s sugar gradually, continuing to beat until stiff peaks form.

In a parfait glass or other desired container, layer even amounts of the strawberries, sauce mixture, and whipped cream mixture; repeat layers. Garnish with strawberry if desired. 6 to 8 servings
