CURED CHICKEN BREASTS

Category: Poultry I

1/4 cup kosher salt
1 tbsp packed brown sugar
2 tsp minced fresh thyme
1/2 tbsp pepper
1 clover garlic, minced
8 bone-in chicken breasts

In a bowl, combine first 5 ingredients. Arrange chicken in baking dish, pressing to coat. Cover and refrigerate 20 minutes. Rinse off salt mixture; pan dry chicken with paper towels.

Prepare grill for direct, medium-hot fire. Coat grill with cooking spray. Grill chicken, skin side down, about 9 minutes. Turn and grill skin side down, about 9 minutes. Turn and grill about 10 minutes.
