2 cups (4 sticks) butter, room temperature
2 cups powdered sugar
1 teaspoons vanilla extract
1/2 teaspoon salt (optional)
4 1/2 cups flour
1/2 cup chopped pecans
1 package (12 ounces) miniature semisweet chocolate chips
1 cup (one 10-ounce jar) maraschino cherries, drained, each cut into 4 pieces (see note)
Preheat oven to 350 degrees.
In large bowl, cream butter. Mix in powdered sugar, and beat in vanilla and, if using, salt. Gradually add flour, mixing until well blended.
Using clean hands, mix in pecans, chocolate chips and cherries. Dough will be stiff. Drop by teaspoonful or drop small chunks onto ungreased cookie sheets. Slightly flatten with fingertips. Bake in preheated oven about 15 minutes.
Note: Use a clean scissors or kitchen shears to cut the cherries; it's easier than chopping.
