2 tbsp extra virgin olive oil
1/2 c chopped onion
2 cloves chopped garlic
1 (16 oz) jar of your favorite salsa (I used mild)
1 cup dry white wine
1 teaspoon dried chopped basil leaves
1 teaspoon dried oregano leaves ( in season use fresh herb)
12 oz Italian bows pasta
1 lb fresh or frozen haddock (cod) cut into 1 inch pieces
1 cup minced clams un-drained, canned or fresh
1 lb medium shrimp fresh peeled and deveined
1/4 cup fresh chopped parsley
Cook pasta and drain, set aside.
In a 5-quart saucepan, over medium heat oil; add garlic, onion, cook stirring frequently about 2-3 minutes until tender and not browned. Add salsa plus a 1/2 jar of water (Poured in the salsa jar to dilute residual salsa), wine, basil and oregano. Heat to a boil, reduce heat and simmer for 10 - 15 minutes (uncovered). Stirring frequently.
Add Cod and chopped clam with juice to sauce. Cook 5 minutes stirring occasionally, add shrimp and parsley cook until shrimp is pink (about 3 minutes ). Toss hot pasta and sauce, sprinkle with additional parsley, salt and pepper to taste and serve.
