APPLE-GLAZED PORK TENDERLOIN

2 whole pork tenderloins
1/2 cup bourbon and apple cider
1/4 cup packed brown sugar
1/8 tsp cinnamon

Place tenderloins in a resealable bag. Mix remaining ingredients and pour over meat. Refrigerate and marinade at least 8 hours over overnight, turning the meat several times.

Preheat oven to 325. Place the meat and marinade in a casserole dish and bake 1 1/4 hours. Baste the meat with the juices occasionally. Remove meat from casserole onto a cutting board. Cover, tented, with foil while making a sauce with the juices.

Heat the juices with some cornstarch and water blended together and bring to a boil, stirring until thickened. Season with salt and pepper, as needed.
