1/2 cup chopped onion
1/4 cup butter, melted
1/2 cup flour
1 cup each milk and half-and-half
1 (8 oz) pkg sour cheese
1 cup shredded sharp American cheese
1 tsp salt
1/8 tsp white pepper
1 tsp chopped chives
5 large russet potatoes, unpeeled and sliced 1/8 inch thick

Saute onion in butter in a skillet until tender. Add flour, stirring until smooth. Cook 1 minute; stirring constantly. Gradually add milk and half-and-half; cook over medium heat, stirring constantly, until thickened and bubbly. Add sour cream and next 4 ingredients, stirring until cheese melts.

Layer half the potatoes in a lightly greased 13x9 inch baking pan. Top potatoes with half the cheese sauce and cover with remaining potatoes and cheese sauce. Cover with foil and bake at 350 for 45 minutes. Uncover and continue to bake for 30-40 minutes or until potatoes are tender. Serves 6
