16-20 firm, ripe Brussels sprouts, ends trimmed and freeing individual leaves
1/2 medium onion, finely diced
2 tbsp dry white wine
1/3 cup chicken stock
4 tbsp butter
Salt and pepper, to taste

Saute onions in 2 tbsp butter. Remove all the leaves from the Brussels sprouts and saute in the skillet for 1-2 minutes. Season with salt and pepper. Heat and add wine. Reduce wine for 1 minute and then add chicken stock, lower heat and cover. Toss mixture occasionally and cook until tender, about 5-7 minutes. Add butter to pan and toss with sprout leaves. Serve.
