8 cups southern-style or country chunks frozen potatoes
1 lb ring smoked sausage, cut into slices
1 large onion, chopped
2 1/2 cups water
1/4 tsp pepper
4 carrots, cut in julienne strips
1 box frozen chopped broccoli, thawed and drained
1 cup shredded cheddar cheese

Cook sausage and onion in oil approximately 5 minutes, stirring occasionally. Add potatoes, water and pepper. Heat to boiling, then reduce heat, cover and simmer for 10 minutes, stirring occasionally. Add carrots, cover and simmer for 10 minutes. Stir in broccoli and cheese. Cook 5 to 10 minutes or until cheese is melted.
