CHICKEN PORTO BELLO
Category: Chicken
1 medium chicken, cut into serving pieces
3 tbsp olive oil
2 tbsp butter
1 tsp vinegar
1 onion, finely chopped
1 small slice ham, cut into thin pieces
3 small carrots, sliced
2 medium onions, sliced
1 cup beef stock
1 cup sweet cider
Saute chicken in olive oil until well browned. Season with salt and pepper. Add next 3 ingredients and cook with chicken until about half done. Remove to a casserole and top with remaining ingredients.
Preheat oven to 350 and bake, covered, until chicken is tender. Remove from casserole.
Thicken sauce in a pan with cornstarch and water and serve over chicken.
