1 box long grain and wild rice
1 tbsp butter
2 tbsp chopped garlic
2 cups water
1 lb bay scallops
1/4 cup lemon juice

Lightly saute garlic in butter in a sauce pan. Add remaining ingredients. Bring to a boil, the cover and lower heat to simmer for 5 minutes or until most of liquid is absorbed.
