3/4 cup pearl barley
4 tbsp sour cream
1 1/2 large onion, chopped
8 cups soup stock
1/2 cup butter
2 carrots, diced
1 turnip, diced
1 leek, chopped
1/2 cup chopped celery
2/3 cup mushrooms
1 tsp salt
1/2 tsp pepper

Simmer barley in 1 1/2 cups stock until tender, add butter gradually. Boil chopped vegetables until tender in the remainder of the stock, then add the barley and seasonings. Add sour cream when ready to serve. Serves 6
