2 lbs boiling potatoes, peeled and quartered
1 medium yellow, peeled, chopped
2 tbsp flour
4 tbsp olive
2 tbsp chopped parsley
1/4 tsp ground nutmeg
Salt and pepper, to taste
Grated rind and juice of 1 lemon

Parboil potatoes for 3 minutes in salted boiling water and then drain. Mix remaining ingredients except for lemon juice in a large salad bowl. Place all in a butter baking dish and drizzle a bit more oil, if desired. Bake at 450 for 20-25 minutes or until nicely browned and tender. Pour lemon juice over top just before serving. Keep hot until served.
