1 lb cooked al dente, drained
1 (26 oz) jar marinara sauce
1/4 cups butter
1 (10-oz) pkg frozen chopped spinach or broccoli, thawed, drained, and squeezed dry
1 cup sliced mushrooms
1 shallot, chopped
1/2 tsp salt and ground black pepper
1/2 tsp dried oregano, crushed
1/2 cup roasted red bell pepper strips
Cooking spray
1 1/2 cups sour cream
1 cup (4 oz) shredded smoked farmer or mozzarella cheese
1/4 cup chopped fresh basil
1/2 cup grated Parmigiano-Reggiano cheese

Preheat oven to 350.

While pasta is cooking, saute vegetables in butter until crisp-tender in a saucepan. Add marinara sauce and heat over medium heat and add seasonings; cook for 10 minutes, stirring occasionally. Remove from heat; stir in cooked pasta and pepper strips.

Spoon half of pasta mixture into a 13x9 inch baking dish coated with cooking spray. Combine sour cream, smoked cheese, and basil; spread over pasta mixture in dish. Spoon the remaining pasta mixture over sour cream mixture; sprinkle evenly with Parmigiano-Reggiano. Bake for 25 minutes or until bubbly. Let stand for 10 minutes before serving.
