3 cups cooked chicken, chopped
1/2 cup pitted black olives, drained and sliced
1/4 cup diced red onion
1 medium green pepper, diced
3 Roma tomatoes, seeded and diced
4 ounces feta cheese, crumbled
1/2 cup peeled, seeded and diced cucumber
1/4 cup extra-virgin olive oil
2 tbsp balsamic vinegar
2 tbsp fresh basil, chopped
1 tbsp fresh oregano, chopped
In a medium bowl, combine chicken, olives, onion, green pepper, tomatoes, feta cheese and cucumber. Stir gently to combine ingredients. In a separate small bowl, whisk together olive oil, balsamic vinegar, basil and oregano. Pour over chicken mixture and stir gently. Serves 6 Notes: Good served on lettuce or spoon the salad into pita halves.
