Makes 4 servings

1/2 pound uncooked acini di pepe pasta (small balls)
1/3 cup olive oil
1/4 cup red wine vinegar
1 tablespoon fresh lemon juice
2 teaspoons Dijon mustard
1 clove garlic, minced
1 tablespoon minced fresh oregano
1 tablespoon minced fresh basil
1 tablespoon minced fresh parsley
3/4 teaspoon salt
1/4 teaspoon cracked black pepper
3/4 teaspoon onion powder
1/2 cup grape or cherry tomatoes, cut in half
1/4 cup kalamata olives, cut in half
3 ounces crumbled feta cheese
1 chicken breast half, grilled and diced
2 bell peppers, cut in half lengthwise and seeded
3 tablespoons pine nuts, toasted
4 sprigs fresh oregano for garnish


Cook pasta according to package directions, about 11 minutes. Drain. Transfer to bowl, and chill in refrigerator.


In small bowl, whisk together olive oil, vinegar, lemon juice, mustard, garlic, herbs and seasonings. Add tomatoes, olives, feta and chicken. Pour dressing over and stir to mix. Chill until serving time.


To serve: Spoon mixture into pepper cups, sprinkle with pine nuts and garnish with oregano.
