BLACK BEAN DIP WITH LIME TORTILLA CHIPS

1 plum tomato, diced
2 tbsp red onion, diced
1 tbsp cilantro, chopped, plus sprigs for garnish
2 (15 oz) cans black beans, drained
1 tbsp ground cumin
2 tsp hot sauce
1 small avocado, peeled, seeded and cut into cubes
1 tsp salt
Lime tortilla chips, for dipping

Place the tomato, onion and chopped cilantro into the bowl of a food processor and pulse until well chopped. Add the black beans, cumin, hot sauce, avocado and salt, to taste, and pulse until the mixture is mostly smooth. Scrape into a decorative bowl and garnish with cilantro sprigs. Serve with tortilla chips. Makes 3 cups.
