1 medium zucchini squash, cut in chunks
1 medium yellow squash, cut in chunks
2 cloves garlic, chopped
1 small can mushrooms
1 (15 oz) can diced tomatoes (or use 2-3 fresh tomatoes diced)
1 small onion, sliced
2 tbsp olive oil
1/2 cup parmesan cheese
1 cup shredded mozzerella cheese
Dash or salt and pepper.

Place all place first 7 ingredients and salt and pepper in thick aluminum foil (enough to form a baking sheet about 12 inches long.. Bake on grill over low fire or good bed of coals for about 20 minutes, stirring occasionally. When vegetables are getting tender add cheeses and cook about 5 more minutes.

NOTE: I just mix it together and bake mine at 350 for 25 to 30 minutes or until squash is tender.
