1 quart shucked oysters
1 cup saltine crackers, crushed
1 egg, beaten
1 3/4 cups milk
1/2 cup butter
salt and white pepper to taste
1/4 cup finely chopped onion and scallions
1 tbsp oil
1 tbsp chopped parsley
Preheat oven to 400. Grease a 2 quart baking dish and set aside. Place oysters and their liquid in a 4 quart saucepan. Cook over medium heat until oysters curl around the edges. Remove from heat and set aside.
In a mixing bowl, whisk together egg and 1/3 cup milk. Add 1/2 cup crushed crackers, salt and pepper, onion, scallions and oysters and any remaining liquid; mix together well. Pour into prepared pan. Toss remaining crackers with oil and toss. Sprinkle over oyster mixture. Bake at 350 for 1 hour and sprinkle with parsley.
