ITALIAN MEAT LOAF WITH ROASTED GARLIC AND MARINARA SAUCE

2 clove garlic, roasted
1 1/2 cups onions, finely chopped
1 cup celery, finely chopped
1/2 cup carrots, finely chopped
3 tbsp olive oil
2 cups fresh bread crumbs, about 6 slices bread and put into food processor
1/3 cup beef stock and red wine
3 1/2 lbs ground beef or a combination of beef, pork and veal
3 eggs
2 tbsp Parmesan and Romano cheeses
2 tbsp parsley

Place garlic in foil and roast in the oven at 350 until softened. Remove and allow to cool. Heat oil in a to skillet and vegetables and cook until softened. Transfer to a large bowl to cool.

Add roasted garlic and remaining ingredients and place in a loaf pan. Bake for 1 hour, covering with foil, if needed, the last 20 minutes. Let stand 10 minutes before unmolding on cutting board or platter. Slice with a serrated knife and serve with marinara sauce.

NOTE: This makes great meatballs. To spice it up, add 1 tsp paprika and a dash of crushed red pepper.
