CHICKEN IN A SUN-DRIED TOMATO MUSHROOM SAUCE

4 tsp olive oil
4 boneless, skinless chicken breasts
1/2 tsp salt
1/4 tsp pepper
2 cups sliced mushrooms
1/3 cup finely chopped shallots
3/4 cup chicken broth
1/4 cup sun dried tomatoes, not packed in oil
1/4 cup dry white wine
1 tbsp chopped parsley

Heat 2 tsp oil in a skillet. Season chicken with salt and pepper and cook in pan about 4 minutes on each side or until pan. Remove from pan and set aside keeping warm. Reduce heat to medium. Add 2 tsp oil, mushrooms and shallots; cook 2 minutes, stirring frequently. Stir in broth, tomatoes and wine; cook for 1 minute. Spoon sauce over chicken and sprinkle with parsley. Serves 4
