12 oz button mushrooms, cleaned and stemmed
1/3 cup olive oil and balsamic vinegar
3 cloves garlic, minced
1 tsp crushed red pepper
1/4 tsp Mexican oregano
Salt and pepper
1 large Spanish onion, sliced into rings

Place mushrooms in a flat serving dish. Place remaining ingredients in a small saucepan. Bring ingredients to a boil and cook until onions soften. Pour marinade over mushrooms and arrange onions slices around mushrooms attractively. Let mushrooms marinate at room temperature for 4 hours, stirring frequently. Refrigerate at least 24 hours.

NOTE: They actually taste better if marinated for several days.
