Category: Poultry I
Prep Time:       Cook Time:       Total Time:

1 3/4 cups chicken stock
1 tbsp canned diced tomatoes, drained
1 tsp grated Parmesan cheese
1/2 tsp Italian seasoning, crushed
1/4 tsp garlic powder
6 skinless, boneless chicken breast halves (about 1 1/2 lbs)

Stir the stock, tomatoes, cheese, Italian seasoning and garlic powder in a shallow nonmetallic dish or a resealable plastic bag. Add the chicken and turn to coat. Cover the dish or seal the bag and refrigerate for 30 minutes.

Lightly oil the grill rack and heat the grill to medium. Remove the chicken from the stock mixture.

Grill the chicken for 15 minutes or until it is cooked through, turning it over once halfway through cooking and brushing often with the stock mixture. Discard the remaining stock mixture.
