1 (12 oz) pkg pesto linguine
1/4 cup olive oil
3/4 cup mushrooms, sliced thin
1/4 cup minced scallions
3/4 cup sun-dried tomato strips
1 tbsp lemon juice
1 cup spinach leaves, chopped
1 1/2 tbsp butter
1/4 cup grated parmesan cheese
Salt and pepper, to taste

Cook pasta according to pkg directions. Before draining pasta, reserve 1 cup pasta water.

Meanwhile, heat oil in large skillet. Saute mushrooms and scallions 4 minutes. Add tomatoes, reserved pasta water and lemon juice. Simmer 2 minutes.

Add linguine, spinach and butter to skillet. Season with salt and pepper. Sprinkle with cheese and serve. Serves 4
