4 oz fresh blackberries, blueberries and raspberries
1 oz Chambord and Marsala wine
4 each egg yolk
8 oz sugar
Combine berries, Chambord, 4 oz sugar & set aside for one hour. Combine egg yolk & 4 oz sugar in metal bowl. Place over a double boiler at medium high heat. Wisk eggs & sugar until eggs thicken to a ribbon stage. Add marsala wine. Place berries in a bowl and cover with the sabayon.
