1 1/2 tbsp butter or oil
16 green prawns, peeled and deveined (leave tails on)
4 cloves garlic, crushed
1 cup thickened cream
1 tbsp basil, finely shredded
1 1/3 cups cooked rice
Flat leaf parsley and chopped chili for decoration
Position ring mould on serving plate. Using the back of a spoon, firmly press 1/3 cup rice into ring mould. Gently lift away mould and repeat with remaining rice.
Melt butter over medium heat in a frying pan or large saucepan. Add prawns and cook for a couple of minutes. Reduce heat, stir in garlic and cook for about 30 seconds, being careful not to brown garlic (it can develop a bitter flavor). Add cream and simmer for a couple of minutes until sauce has thickened and prawns are cooked through. Stir in basil.
Place 4 prawns on each circle of rice. Drizzle with sauce. Decorate with parsley and chili and serve immediately.
