1 (5.25 oz) pkg au gratin potato mix
1 (8 oz) jar picante sauce
2 cups water
2 cups milk
1 1/2 cups shredded mild Cheddar cheese
1 (2.25 oz) can sliced olives, drained

In a medium-sized saucepan, combine the potato mix, picante sauce, and water. Bring to a boil over medium-high heat. Reduce the heat to low and simmer for 30 minutes, stirring occasionally, or until the potatoes are tender. Add the milk, cheese, and olives. Mix well, then simmer for 5 more minutes, or until the soup is hot.

NOTE: This is great served with tortilla chips.
