3 cups ground graham crackers
1-1/2 sticks of butter
1-1/2 cups whipping cream
3/4 cup chocolate sauce
2/3 cup egg whites
1 cup sugar, plus more for sprinkling
Caramel sauce
Preheat oven to375. Place ground crackers in a medium bowl and stir in melted butter. Mix thoroughly, divide mixture into tart shells, press into the bottom, going about three-forth way up the sides.
Bake for 5-8 minutes then set aside to cool. Increase oven temperature to four hundred. In a large chilled mixing bowl, beat cream until soft peaks form. Add chocolate sauce and beat until whipped. Fill cooled tart shells with mousse and refrigerate while you beat the egg whites. Clean mixing bowl and beat the egg whites at medium speed until soft peaks form. Add the sugar, a little at a time, and continue beating until the meringue is shiny, thick and stiff. Spread meringue on tart shells. Sprinkle each with sugar. Bake for about five minutes until tops are golden. Serves: 6
