1 Tbsp unsalted butter, plus 1/2 cup
(1 stick) unsalted butter melted

4 lbs russet potatoes, peeled and cut into
1-in pieces
1 cup whole milk, at room temperature
1 1/2 cup freshly grated Parmesan cheese
freshly ground black pepper
2 Tbsp dried plain bread crumbs

Preheat the oven to 400. Coat a 13x9 inch baking dish with the 1 Tbsp of butter. Bring a large pot of salted water to a boil and cook the potatoes until they are very tender, about 15 minutes. Drain; return the potatoes to the same pot and mash well. Beat in the milk and melted butter, then mix in the mozzarella cheese and 3/4 cup of the Parmesan cheese. Season to taste with salt and pepper. Transfer the potatoes to the prepared baking dish.

In a small bowl, stir together the bread crumbs and remaining 1/4 cup Parmesan cheese. Sprinkle the bread crumb mixture over the mashed potatoes. (the dish can be prepared to this point up to 6 hrs ahead. Cover and chill. Bring back to room temp before baking.) Bake uncovered until the topping is golden brown, about 20 minutes.
