2 jalapenos, seeded and chopped
1/2 small yellow onion, chopped
1 pound white American cheese, coarsely chopped
1/2 pound yellow American cheese, coarsely chopped
11/2 cups half-and-half
1 tsp ground cumin
1/2 tsp pepper
1 cup shredded fresh spinach

Combine first 7 ingredients in the top of double boiler. Over medium-high heat, bring water to a boil in bottom of double boiler; reduce heat to medium-low. Place top of double boiler over gently simmering water; upper pan should not touch water. Cook for 25 to 30 minutes, or until cheese is melted, stirring occasionally. Stir in spinach. Serve with tortilla chips.
