Dressing
6 tbsp olive oil
1 tbsp red wine vinegar
2 tbsp lemon juice
1 tsp minced garlic
1 tbsp Dijon mustard
Salt and pepper, to taste

2 lbs shrimp, cooked, peeled and deveined
1/2 cup black olives
1/4 cup sun-dried tomatoes

Mixed salad greens
Grated parmesan cheese

In a mixing bowl, mix in dressing ingredients. Toss in next 3 ingredients. Arrange greens on 4 salad plates and top with shrimp mixture. Garnish with cheese. Serves 4
