2 cups cooked turkey, cubed
2 (10 oz) cans enchilada sauce
1 (4 oz) can chopped green chilies
1 tsp dried onion flakes and cilantro
12 corn tortillas
2 tbsp chopped onion
1 cup chopped and seeded tomato
1/4 cup chopped ripe olives
1 cup cheddar cheese, shredded

Preheat oven to 350.

In a bowl, combine turkey, 1/2 cup enchilada sauce, chilies, onion flakes and cilantro. Spoon 2 heaping tbsp mixture down center of each tortilla. Roll each jelly-roll style and place in a 13x9 inch baking pan sprayed with cooking spray. Top with remaining enchilada sauce, tomatoes, olives and cheese.

Bake for 25-30 minutes or until mixture is hot and bubbly. Serves 6
