1 (8 oz) box New Orleans-style red beans and rice
1 1/2 (16 oz) bag frozen pepper stir-fry blend (green, red, yellow bell peppers and onions)
1 (16 oz) pkg cooked New Orleans-style smoked sausage, diagonal-sliced
1/2 cup canned diced tomatoes seasoned with green chilies
1 (8 oz) pkg Four Cheese Mexican Blend Shredded Cheese

Prepare red beans and rice according to package directions. Stir-fry pepper and onion blend in large skillet according to package directions. Add sausage and tomatoes to pepper and onion blend; simmer until heated. Add prepared red beans and rice; mix well. Sprinkle with cheese. Cover; let stand until cheese melts.
