  • 1 cup sliced fresh mushrooms
  • 1 cup chopped onion
  • 1 tablespoon salt-free Cajun seasoning
  • 10 ounces smoked turkey sausage, sliced
  • 1 cup uncooked long grain white rice
  • 3 cups low sodium chicken broth
  • 1 can (15 ounce size) kidney beans, rinsed and drained (optional)

Heat a large skillet over medium-high heat. Add the mushrooms, onions, Cajun seasoning, and smoked turkey sausage. Cook, stirring frequently, for 5 minutes.

Add the rice, broth, and kidney beans to the skillet and mix well. Bring the mixture to a boil then reduce the heat to a simmer. Cover the skillet and cook for 20-25 minutes or until the rice cooked and the liquid has been absorbed.

Stir the Cajun sausage and rice and serve hot.
