1/2 lb bay scallops
1 green pepper and small onion, sliced
1 cup sliced mushrooms
3 tbsp butter
1 cup shredded Monterey jack cheese
1 diced tomato and avocado
Flour tortillas, warmed
Topping: Sour cream, additional shredded cheese and salsa

Saute vegetables until tender in butter. Add scallops and saute until cooked. Add tomatoes and cheese, cook just until cheese is melted. Place mixture on tortillas, add toppings. Serve
