RED POTATO CASSEROLE

2 1/2 lb small red potatoes
1/2 cup butter
3 tbsp flour
1 tsp salt
2 cups water
1 tbsp lemon juice
Fresh dill and chives
1/4 lb bacon

Fry bacon until crisp. Remove from pan; cool and crumble. Set aside. Cook potatoes into salted water, leaving skins on.

In a pan over low heat, melt the butter. Stir in flour, salt and pepper; then slowly whisk in the water. Continue to cook until thickened. Add the lemon juice and stir.

Drain the potatoes when done and space in a casserole dish. Pour sauce over the potatoes. Bake at 325 for 20 to 25 minutes or until heated through.
