1 lb ground chuck
1 (16 oz) can stewed tomatoes, broken up
1 (14 3/4 oz) can beef broth
1/2 cup salsa or picante sauce
2 medium zucchini, thinly sliced
3/4 tsp ground coriander and cumin
1/2 tsp salt and chopped cilantro

Combine tomatoes, broth and sauce in a saucepan. Cover and heat to simmer.

Meanwhile, combine ground chuck and spices, mixing lightly but thoroughly. Form into meatballs; Add meatballs to the broth and simmer about 5 minutes. Add zucchini and simmer until zucchini is tender. Garnish with cilantro. Serves 4
