1 lb boneless, skinless chicken breasts, cut into thin strips
1 cup water
1 cup uncooked instant rice
3/4 cup fat-free Caesar salad dressing
8 ten-inch flour tortillas, warmed
2 cups shredded lettuce
2 tomatoes, chopped
1/2 cup seasoned croutons (optional)

Spray a large skillet with nonstick cooking spray. Add the chicken; cook over medium-high heat for 10 to 12 minutes, or until golden and no pink remains. Add the water. Bring to a boil; add rice. Cover, remove from heat, and let stand for 5 minutes, or until the liquid is absorbed. Stir in the salad dressing.

Fill each tortilla with lettuce, chicken and rice mixture, tomatoes, and croutons, if desired. Fold in the sides of the tortillas, roll up, and serve immediately. Makes 4 wraps
